Wow, Mondays sure do roll around fast, huh? Here’s what will be cooking for din din – keep in mind I’m on a challenge.
Monday: Meatless Veggie Chili
Tuesday: Shepherds Pie (sans the meat)
Wednesday: Asian Veggie Taco with a side of steamed edamame
Thursday: Italian Rice and Beans“
Friday: Veggie Calzones, Salad
Saturday: Chipotle, Corn and Black Bean Stew
Sunday: Southwestern Pasta
Today, I attempted to soak and cook my own beans in the slow cooker to freeze for later instead of buying canned. All turned out well except for the kidney beans – I overcooked them and they came out mushy! But my black beans and pinto beans were made it out okay. This is a healthy and money saving way to eat beans. I think I’ll do a post about this coming soon.
With ya girl on the beans. The slow cooker is the best. Rob and I tried doing it on the stovetop and it takes forever, but when I was finally done, I froze them in ziploc baggies in portion sizes for sides for the next week. I add some fresh chopped onion and sour cream, mmmm!
Thanks for your comment. One recommended book I kept seeing was 123 Magic Discipline for kids 2-12. Also books on positive discipline and any advice from Dr. Sears. Also when we adopted Gabby, our agency gave us a book called Grace based parenting that I heard was great. Haven’t read it yet but keep meaning too. We received so many great parenting books from them. I saw your read, Attached at the Heart, is that good. Just from what you’ve written here, it looks SO good. Have you read Attachment Parenting by Dr. Sears, I’ve read excerpts and that is what caused me to completely change my parenting style. Have a great week! Attached at the Heart is a great book. I highly recommend it. I’ve read bits and pieces of things by Dr. Sears – I refer to him a lot for things. I actually never intended on parenting this way until I had Judah and everything changed. Glad they did!!! I have heard about Grace Based Parenting recently and am looking more and more into it. It seems like it is similar to APing but with a spiritual aspect added to it. There is a site I have checked out called http://www.aolff.com that shares a lot about GBPing. I have also seen they blog you mentioned, it’s great. She’s very inspiring.

Congrats on trying the beans – I know it’d seem like a hassle to people who usually use cans but once you get in the habit it’s not. Have you tried just boiling them in a pot instead of the slow cooker? It only takes about 45 min. for most beans.

Kelly….thanks. I am so going to check out that blog. We budget our grocery cost every month so any help on learning how to keep it mostly fruits and veggies and low cost – the better! How did you get into the whole food/raw food/veggie life?

Bek! Hehehe….I’m laughing b/c I don’t have a recipe yet. I saw something that was a taco type thing with a bunch of veggies in an asain sauce on some site and I’m going to attempt to recreate that. I’ve been thinking about how to go about it…so if it turns out okay, I’ll pass it along.
